The dried seeds of Brassica plants. Fried whole, they taste nutty. Crushed, contact with liquid activates a volatile hot pungency. With a pestle and mortar freshly ground seeds have a much stronger flavour compared to already ground, or in Indian dishes cooking them till they pop brings forth a great flavour.
