An aged Dutch cheese similar to that of an Old Amsterdam or a Gouda Vintage. Coated in a thick wax to retain moisture which ensures mature flavour while also maintaining a softer texture compared to any other 12 month old cheese. Sharp and firm with calcified salt crystals throughout for an added crunchy texture. Primarily used on cheese boards or eaten along size wine or beer.
