Coated in cracked peppercorns this thick dry cured meat commonly made with pork and matured for many months giving it a dense and intense flavour. Similar to salami made with 2/3 meat and 1/3 fat it hangs to dry then sliced thinly and enjoyed a long side other meats, cheese, wine and beer.
