This multi NZ award winning cheese has also claimed fame at the international cheese awards. Crumbly with a well developed full and intense flavour. The white specks throughout the cheese are calcified salt crystals, these ass a gritty crunchy texture, this is achieved by aging on wooden shelves for over 9 month. Salty, sharp and a little sweet it is well complimented with a full bodied red wine or port.
